Antioxidant-Rich Tiramisu

Here is the delicious Tea-ramisu recipe I made tonight! I also made my own ladyfingers but you can easily buy them at your local bakery.
Ingredients:
- 1.5 recipe Ladyfingers batter. You should get (2) 16 x 12 sheets.
- 2 cups of strong Mate Toscana (4 T of Mate Toscana tea brewed for 20 minutes with 2 cups of boiling water, then filter the leaves)
- 1 recipe Mascarpone Filling (find the recipe on our blog)
- Unsweetened Cocoa Powder
1. Line a 16 x 12 inch pan with a layer of the cooled ladyfingers. Soak the first layer with the strong Mate Toscana. Spread half of the mascarpone filling on top. Sift cocoa powder over the filling.
2. Top with the second 16 x 12 ladyfingers sheet. Soak the second layer with the strong Mate Toscana. Spread the remaining mascarpone filling on top. Cover the cake and refrigerate for at least 2 hours or, preferably, overnight.
3. Sift cocoa powder over the sheet and serve with a cup of your favorite KONI tea. I prefer KONI Caramel Slender, KONI Creme Earl Grey , or KONI Slim it Sencha. with my tiramisu.
Italian Love Affair Martini

Seduce your taste buds with my sexy remake of the traditional tiramisu martini. Serve your loved one a biscotti dipped in this tantalizing drink.
INGREDIENTS:
- 2 ounce kahlua
- 3 ounces of chilled KONI Mate Toscana*
- 1 ounce vanilla vodka
- 1 ounce of white crème de cacao
- 2 ounces of light cream
- Plate of chocolate shavings
- sliced strawberries
* Use 1 tsp of mate toscana tea to brew 3 ounces of mate toscana. Infuse the tea for 15 min. Chill.
* Simple syrup : equal parts of hot water and white sugar. Make sure the sugar is completely dissolved and the mixture is cooled before using. This can be stored in the refrigerator for weeks.
PREPARATION:
Dip the rim of the martini glass in simple syrup. Then dip the rim in your plate of chocolate shavings.
Combine the kalua and chilled mate toscana in the martini glass.
Combine the vodka, white creme de cacao, light cream, simple syrup in a martini shaker filled with ice.
Shake vigorously and carefully strain into the rimmed martini glass. This will create a layer on top of the mate toscana layer.
Garnish with a slice of strawberry. Voila!
Slimming Lemon Zucchini Bread

This is the most delicious and softest zucchini bread you will ever bake. With the addition of KONI Slim it Sencha, it is the perfect breakfast treat that is packed with antioxidants and slimming power. A recent study has shown that daily catechin intake (588mg of catechin for 12 weeks) can reduce weight, especially body fat. Catechin is produced in the tea plant to protect it against UVB radiation, and Sencha is the most exposed to the sunlight. As a result, Sencha leaves have the most catechin and slimming power. I love to enjoy this bread with a cup of Slim it Sencha or a cup of KONI Mate Toscana. Here is my recipe:
INGREDIENTS:
* 3 eggs * 1 1/2 cups granulated sugar or 1 1/2 teaspoons of truvia * 2 teaspoons vanilla extract * 1 cup vegetable oil * 1 1/2 teaspoons ground cinnamon * 3/4 teaspoon ground nutmeg * 2 teaspoons of grated lemon * 2 cups grated zucchini * 3 cups all-purpose flour * 1 teaspoon salt * 2 teaspoons baking soda * 1/2 teaspoon baking powder * 2 teaspoons of ground KONI Slim it Sencha tea * To grind, place 2 heaping teaspoons of dry KONI Slim it Sencha into a spice/coffee grinder and grind very small
* optional - add 1 small can crushed pineapple, undrained or a cup of shredded carrots
DIRECTIONS:
1. Combine flour, ground tea, baking powder, baking soda, and salt. 2. In a large bowl, mix oil, eggs, vanilla, sugar, cinnamon, and nutmeg. Blend in zucchini and pineapple. Stir flour mixture into zucchini mixture. Pour batter into two greased and floured 9 x 5 inch loaf pans. 3. Bake at 350 degrees F (175 degrees C) for 55 minutes. Cool on wire racks.
